3 kaffir lime leaves, chopped 1/4 cup lemongrass, sliced thin
1 Tbsp ground black pepper
1/8 cup mushroom flavored soy sauce
Pound galangal, kaffir lime leaves and lemongrass in the mortar and pastel until they are a paste. Rub the paste on both side of the fish and then apply pepper and soy sauce. Cook it on high broil for 10 minutes on each side. It might take more or less time depending on the size of the fish.
Thai dipping sauce
We always have this hot sauce with seafood.
5 fresh or frozen chili peppers
3 cloves garlic
1-2 tsp sugar
1 whole lime, juiced
2-3 Tbsp fish sauce
Cilantro for garnish
Use mortar and pestle to smash the chili peppers and garlic together until it is a paste. Add the rest of the ingredients and garnish with cilantro and serve the fish with the dipping sauce on the side.
